A Summertime Menu

Do you ever draw a blank when trying to decide what to make for dinner? If so, I have a great meal option for you that is super simple and has the taste of summer. It is tried and true and has the approval of all four of our kids. 

This menu started with two sister-in-laws. One introduced me to a packaged seasoning mix and the other inspired the green beans. To take the menu up a notch, we brought the flavor of Mexican street corn to our table after a trip to an upscale Mexican restaurant in Philadelphia.

Roasted Green Beans

Mesquite Grilled Chicken


1 Packet McCormick’s Grill Mates Mesquite

1/4 C oil

1/4 C water

2 lbs chicken breast

Marinate the chicken for at least 20 minutes then grill.

Roasted Green Beans

2 lbs Whole frozen green beans

Olive oil (or my favorite, peppered bacon olive oil from Downton  Olive in Newnan, GA)

Garlic powder



In a large mixing bowl, drizzle olive oil all over green beans. Sprinkle seasonings over the top until the veggies are evenly covered. Mix beans until they are all shiny. If they do not get to that stage, add more oil. (Don’t you hate vague recipes?)

Spread the beans on a jelly roll pan and bake at 375 for 20-40 minutes, stirring them halfway through. I know that’s a wide window but some people like them more cooked than others. 


Corn on the Cob

How to make corn on the cob is a post in itself but I used the boiling method. Just don’t overcook it because mushy corn is not the best.



Mexican Street Corn Sauce

¼  C Light mayonnaise

¾ C Light sour cream

1 T Lime juice

2 T Chopped, fresh cilantro

½ C Grated Parmesan cheese

Mix all of the ingredients together and serve.

Real street corn is roasted on a grill and slathered with this sauce. To make life simple, I based my recipe on Tyler Florence’s but just served it as a condiment to be used on both the chicken and corn.

There you have it: a protein, a carb, and a green vegie. It’s a quick, colorful, and balanced meal with tons of flavor. Enjoy!
